Winemaking

The harvest at Domaine du Parandou is the reward for a year’s hard work. The grapes are harvested after tasting the berries in the vineyard. When the berries release the desired aromas, we decide to take the grapes to the cellar so that each terroir can express its history to the best.

Now it’s time for the vinification, the period when we let the must to express its terroir and typicity to the full. We have chosen to use the indigenous yeasts that are naturally present on our grapes to ensure that our terroirs are clearly identified.

Only concrete vats are used for winemaking, in order to produce wines of great finesse with intense vivacity and a fruity bouquet. We let the grapes infuse naturally and the maceration time is determined by our tasting.
